This is the smallest cake we have ever made! At just 1.5 inches tall these dark chocolate caramel filled topped with swiss meringue caramel buttercream beauties were the bomb! The snickers sliced heart was the perfect compliment to these delectably rich bite sized treats.
These minis are the result of my Mom who once again, managed to loop me into one of her projects. One thing is for certain - whatever my Mom is involved in... there will be delicious food... she is kind of a food snob. Ironically this creation is the result of eating a delicious brunch w her and some friends at Medicis just 10 days ago. I was enjoying my challah french toast w whipped cream and strawberries while she and her lady friends were enjoying the Bloody Mary Bar and complaining about the lack of an International Women's Day event in town.
Someone said "well, lets just have one", I swear to you by the end of the meal they had an outline of the project and everything. They were a whirlwind! Within the next few days they had an entire line up of speakers, performers, & poets. They had secured a hall and all the overhead funding through only female owned local businesses. They had even arranged for onsite T-shirt Printing. They were on the radio, they were in the news. It was crazy. My moms phone was buzzing 24/7. They were so efficient they had a few days to rest before the actual event.
I said I wanted to make some food for the speakers, performers and volunteers the night of the event. The only problem - it had to be finger food and I have never made a cake less than 10" tall with 3 layers. So, after some work and research I altered my Quad Chocolate Salted Caramel Layer Cake recipe into these little bites of OMG deliciousness. Despite all the worrying I did they turned out Phenomenal.
